This article will show you how to cook collard greens

Difficulty: Moderate
Instructions

Things You'll Need:

  • Big Pot
  • 5 large bunches of greens
  • Johnnys Salt
  • Hammhocks
  • Hot Sauce
  • Patience
  1. Step 1

First wash and devein the greens. This takes a while and is tedious. You want to only use the dark leaf part of the green. Rip them into about 2 inch square pieces.

  2. Step 2

Place the greens in a large pot with water and generously sprinkle Johnnys Salt and a touch of vegetable if you wish. Let the greens cook over medium heat for about 45 minutes.

  3. Step 3

After the greens have boiled down a little bit add your hammocks and continue cooking slowly for several hours. Slow cooking for hours is the trick here. You can also add some bacon for flavor if you wish. I don't usually add it as the greens taste good by themselves.

  4. Step 4

After about 3-4 hours of slow cooking your greens should be ready. Drain as much of the water as you can and place the greens back in the pot. When you serve them throw some hot sauce on them and your good to go.

Tips & Warnings
  • Be patient don't try and rush greens. The only way they turn out good is you get them started early before your meal. Often we just cook them around holidays because of the fact that they take so long to cook right.
