Make an amazing strawberry shortcake.

Instructions

Things You'll Need:

  • 115 g butter
  • 50 g caster sugar
  • 175 g plain flour,sifted
  • 250 g Mascarpone
  • 2 tbsp clear honey
  • 2 tbsp milk
  • 400 g strawberries, hulled
  • 1 tbsp icing sugar, plus extra for dusting
  1. Step 1

    Preheat the oven to 180ºF.

  2. Step 2

    Cover two baking trays with non-stick baking paper.

  3. Step 3

    Beat the butter and caster sugar together until creamy.Add the flour and mix together using your fingertips to make dough. Keep your fingers cool and do not over-mix.

  4. Step 4

    Put the dough on a sheet of baking paper and roll out under a piece of cling film. Roll the dough to the thickness of a pound coin. Cut out as many rounds as you can using a 7 cm (3") cutter.

  5. Step 5

    Bake the rounds for 10 minutes, then leave on the tray to cool for ten minutes. Remove from tray and allow to finish cooling on a wire rack.

  6. Step 6

    Mix the Mascarpone with the honey, milk and vanilla.

  7. Step 7

    Cut 3 strawberries in half and set aside.

  8. Step 8

    Whizz half of the remaining berries in a blender with the icing sugar to make coulis. Slice the rest of the berries and divide between six biscuits, with most of the Mascarpone. Top with the other biscuits. Dust with icing sugar and decorate with Mascarpone and half a strawberry.

  9. Step 9

    Serve with the coulis.
