How to prepare and cook Jamaican Curry Chicken
Jamaican curry chicken is a signature dish of the popular vacation island in the Caribbean. Also sometimes referred to as Jerk chicken (although typically different depending on the spices and marinade used), the key to the dish lies in the seasoning and vegetables cooked with the meat. Once an ethnic dish served only at Jamaican restaurants, today Jamaican curry chicken is prepared and served all over the country with slight variations. Does this Spark an idea?

Clean the chicken by running water over it. Pat it with a dry, clean towel, but leave it moist.

Rub the chicken down with 1 tbsp. curry and 1 tsp. hot sauce. Add 1 tbsp. each salt and pepper to the chicken.

Separate the chicken into large pieces by hand. Place the pieces into a large zip-top bag and add the rest of the curry.

Dice onions, green and red peppers, and cut two potatoes in half. Add the vegetables to the marinade bag and shake the entire thing. Allow it to sit for an hour.

Prepare a large frying pan with 2 tbsp. vegetable oil. Set the stove on medium.

Take the chicken and vegetables out of the marinade. Place them all into the pan and flip them over every few minutes. Add 1 cup of water to the marinade bag and pour the spices over the chicken.

Remove the vegetables when cooked. Switch the stove to low heat. Allow the chicken to simmer for an hour.

Shut off the stove and remove the chicken. Serve the chicken and vegetables.
