2 Radishes Sliced Thin (Optional - More for Color)
3 Tablespoons of Cilantro - Chopped
3/4 Cups of Crumbled Feta Cheese
1/2 Teaspoon of Dried Oregano
2 Tablespoons of Red Wine Vinegar
5 Tablespoons of Organic Extra Virgin Olive Oil (Or Non-Organic)
3 Tomatoes - Cut into Wedges
Pepper
Medium Size Saucepan
1 Cup of Water
Colander to Steam Green Beans over Saucepan
2 or 3 Medium size Mixing Bowls
Large Wooden Spoons
Step1
Bring 1 cup of water to a boil in your medium saucepan. Place colander over saucepan, add all green beans(be sure to trim the green beans) to the colander and cover. Let steam for about 5 minutes.
Step2
Transfer the green beans to a bowl. Chop your red onion, cilantro,and radishes (slice thinly - and these are optional for color.) Add these ingredients to the green beans and mix well.
Step3
Whisk the red wine vinegar and olive oil together in separate bowl. Add mixture to the green beans mixture. Stir well. Sprinkle oregano over the top of the salad and add pepper to taste preference. I like a lot of pepper so I add a lot!
Tips & Warnings
Don't over steam the green beans or they will be soggy.
