Freeze platters and bowls. One of the easiest things you can do to ensure that party foods stay chilled is to freeze the platters and bowls you will use for serving. The best materials to freeze are glass and stainless steel. Both will stay cold during your party.

2
Break out the ice. Ice is wonderful for packaged items and seafood. All you need to do is fill a bowl with ice and place your party food down into it. This will keep items chilled, even as the ice starts to melt.

Purchase insulated bowls. Insulated bowls are easy to use. All you need to do is add ice cold water to the bowl a few minutes before the party. Right before serving, dump out the water and add your party foods. Because the bowl is insulated, it will keep items nice and cold.

Freeze part of the food. This tip works extremely well with cold soups. After preparing your soup, freeze a quarter of the recipe. Once frozen, place the soup into a blender and blend until crushed. Mix with the rest of the soup and place on your buffet. As the party progresses, the soup will melt and keep the rest of the soup chilled.

Serve foods in small quantities. Instead of placing all of your party food on the table at once, only put out a small bit at a time. This ensures that you still have some chilled in the refrigerator.
