Difficulty: Moderately Easy
Things You’ll Need:
- 3 to 4 boneless, skinless chicken breasts
- 2 tbs. soy sauce
- 1 20-oz can pineapple chunks (or slices, which will need to be cut)
- ¾ cup brown sugar
Step1
Spray a non-stick pan and then brown the chicken for 3 to 4 minutes on each side.
Step2
Add liquid from canned pineapple. Cook covered on medium-high heat for about 5 minutes, turning chicken periodically. This will boil down some of the pineapple juice.
Step3
Add soy sauce, pineapple chunks, and brown sugar. Stir to mix. Cover and continue to cook on medium to low heat for a total of 20 minutes.
Step4
Serve on rice. Green beans go excellently with this recipe.
