How to Eat and Make Grilled Eggplant Parmesan

Most people don't realize how good Eggplant really is. Eggplant is a health alternative to eating red meat off the grill.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 3/4 cups of Italian Garlic Steak Marinade w/ olive oil 1 medium eggplant, cut into 1/2 inch thick slices 1 medium tomato, sliced (remember to clean the tomato) 1 1/2 cups shredded fresh mozzarella
  1. Step 1

    In a large zip lock resealable plastic bag, pour 1/2 cup of the Italian Garlic Steak Marinade w/ olive oil over eggplant, toss to coat. Close bag and let marinate for 15 minutes.

  2. Step 2

    Remove eggplant from Marinade. Grill, turn once, brush with remaining 1/4 cup Marinade. Grill for 10 minutes or until eggplant begins to become tender.

  3. Step 3

    Top grilled eggplant with tomato, mozzarella, and seasoned pepper. Grill for at least two minutes and cheese is melted.

Tips & Warnings
  • I like to shred my own cheese, I feel like it is fresher and melts better. You can also put this on a hamburger bun and make it a sandwich.
