Gluten-free cooking can be easy and delicious! These yummy cake doughnuts are easy to make, especially if you have a deep fryer.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 1/4 cups Pamela's GF Baking & Pancake Mix
  • 1/4 cup melted butter
  • 2/3 cup milk or buttermilk (optional: add 1 tbsp vinegar or lemon juice to milk)
  • 2 eggs
  • 1 cup white or brown sugar
  • 2 tsp vanilla
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  1. Step 1

Preheat oil to 365 to 375 degrees F in deep fryer. You need at least 1 1/2 inches - more is better.

  2. Step 2

    Mix all ingredients together.

  3. Step 3

Dust counter with additional GF Baking & Pancake Mix.

  4. Step 4

For doughnuts, scoop out 1/3 cup dough, coat both sides with flour, flatten slightly, and press hole through center with thumb.

  5. Step 5

For doughnut holes (easier, as this dough is pretty soft, making for very floppy doughnuts), scoop out 1 inch balls (a little less than 1/4 cup).

  6. Step 6

Carefully lower doughnuts / holes into oil. Fry for approximately one minute on each side.

  7. Step 7

Remove doughnuts from oil and let drain / cool on paper towels.

  8. Step 8

Eat straight, or roll in powdered sugar first. Tasty!

Tips & Warnings
  • Be very careful with hot oil!
  • If you don't have a deep fryer, you can heat the oil on the stove, but I don't recommend that - I nearly burned down my apartment years ago that way...

on 8/24/2009 These look amazing, especially if you eat them with apple sauce or powdered sugar. I am going to have to try them soon!

on 7/10/2009 Wow, this is the first appealing gluten--free donut recipe I've seen! Pamela makes really good cookies so I can imagine how well one of the mixes would work.

I'll bet they would taste beyond heavenly if they were fried in ghee. lol
