Things You'll Need:
- Eggs
- Salt
- Pepper
- Sour Cream
- Tablespoon of butter or margarine
- Small skillet
- Fork or Whisk
- Small bowl
- Rubber spatula

Step 1
Crack the eggs into a bowl.

Add about a 1/4 cup of sour cream. Sour cream makes them fluffy.

Whip the eggs with a fork or whisk.

In a small skillet, melt a tablespoon of butter over high heat.

Add the egg mixture to the skillet. When the bottom of the mixture starts to form a "skin", turn off the stove, then with a rubber spatula, scrape the bottom from one side to another to pull the "skin" to one side of the skillet, while tipping the skillet so that the uncooked portion runs to the unoccupied side. Repeat this, rotating the cooked eggs to the top of the uncooked portion, until eggs are completely cooked. Break up the eggs using the spatula. Salt and pepper to taste. Serve immediately.
