How to Berry Freeze

This is a perfect topper to any 4th of July party. The berry mix can even be varied to include red white and blue layers.

Instructions

Things You'll Need:

  • 3 cups (1 lb) fresh raspberries
  • 1 1/2 cups powdered sugar
  • 1 tablespoon kirsch
  • 1 1/2 cups chilled heavy whipping cream
  • 1/2 cup sour cream
  1. Step 1

    Add and mix 2 1/2 cups raspberries, powdered sugar, and kirsch in the blender until creamy. Place in a large mixing bowl.

  2. Step 2

    Using your mixer, beat cream in another large mixing bowl until peaks form. Add sour cream and beat long enough to blend.

  3. Step 3

    Fold whipped cream mixture into raspberry mix until distributed.

  4. Step 4

    Divide mousse among six 6 parfait glasses. Cover each with plastic wrap and freeze. Set out on the counter to thaw as you begin to make dinner about 2 hours in advance of serving. Uncover the glasses and top with the rest of the berries.

Tips & Warnings
  • Decorate with mint springs or whipped cream.
  • Watch out for berry allergies.
