Homemade pasta shells with a delicious cheese filling makes this recipe for Manicotti outstanding.

Instructions
  1. Step 1

    SHELLS:

    1 dozen eggs
    1/2 teaspoon salt
    2 cups water
    2 1/2 cups flour

  2. Step 2

    To make pasta shells, combine eggs, salt, water and flour in a mixing bowl. The mixture will be thin. Preheat a non-stick skillet and spray with non-stick cooking spray. Pour 1/2 cup of batter onto hot skillet. Tilt pan so batter covers the bottom, like a crepe. Cook a few minutes until set and flip to the other side. Cook the opposite side for 1 minute or less. Remove pancake-type shell from pan and set aside. Repeat this process until all batter is used.

  3. Step 3

    FILLING:

    2 pounds cottage cheese
    2 eggs
    1 teaspoon parsley
    3/4 cup grated Parmesan cheese

  4. Step 4

    For filling, combine cottage cheese, eggs, parsley, and parmesan cheese. Mix well. Set aside.

  5. Step 5

    Spray 9x13 baking dish with non-stick cooking spray. Line bottom with spaghetti sauce. Set aside.
    Spoon cheese filling mixture down the center of one pasta shell. Roll shell up jelly-roll style. Place seam side down in prepared baking dish. Repeat until all stuffing and shells are assembled.

  6. Step 6

    Pour additional spaghetti sauce over the top of the manicotti rolls. Sprinkle with additional Parmesan cheese. Cover with foil and bake 30 minutes in a 350 degree oven.

  7. Step 7

    Serve with additional sauce and meat balls, if desired.
