This cake is light, moist and so delicious! Perfect for those summer get togethers! If you serve this you're sure to get rave reviews!

Instructions

Things You'll Need:

  • 1 yellow cake mix
  • 1 11 oz. can of mandarin oranges (reserve the juice)
  • 4 eggs
  • 1/4 cup vegetable oil
  • 1 container of Cool Whip
  • 1 15 oz. can crushed pineapple, drained
  • 1 3.5 oz. package of instant vanilla pudding mix
  1. Step 1

    Combine cake mix, canned oranges (AND juice), oil and eggs.

  2. Step 2

    Mix well.

  3. Step 3

    Pour batter into three greased/buttered 8 inch round pans cake pans. The cake layers will be thin. You can also use one large cake pan for thicker cake but baking time will need to be adjusted.

  4. Step 4

    Bake at 350 degrees for 25-30 minutes, or until a toothpick inserted into center of cake comes out clean.

  5. Step 5

    Allow cake to cool.

  6. Step 6

    Frosting:

    Combine Cool Whip, drained pineapple, and instant pudding mix.

  7. Step 7

    Mix well.

  8. Step 8

    Frost and stack each layer then frost top of cake.

  9. Step 9

    Chill and serve!
