How to Prepare Fish to Cook
In the mood for some fresh fish? If you have just arrived from a fishing trip, and want to cook up a delicious fish recipe, you are going to need to prepare your fish first. You are going to also need to know how to do it correctly, or you run the chance of getting sick from parasites! Cleaning Your Fish

Clean your fish with fresh, clean water. Do not use the water from the stream that you just fished in! Parasites from the stream water, will continue to contaminate the fish. So it would be like you never even cleaned your fish. Bottled or tap water is best.

Remove the scales. This is a fairly easy process. With a dull knife, or a butter knife works great, gently scrape the sides of the fish until the scales are no longer visible.

Cut your fish open from mid belly, up to the bottom of the head.

Remove the inner bones and guts of the fish. Double check that you have removed everything! Rinse out the inside of the fish.

Remove both of the dorsal fins. This can be done with a pair of pliers.

Wash your fish one more time to remove any left over traces of bacteria or parasites.

Follow the instructions for your recipe accordingly, after your fish has been cleaned.

Be sure to wash your fish as soon as possible after being caught.
Handle your fish gently. You don't want to bruise or toughen the skin of your fish before cooking.
If you are using your cleaned fish for a sushi dish, the fish must be chilled first.
Always wash your hands, utensils, and cleaning surface well, with antibacterial soap after cleaning your fish. This will stop the spread of bacteria.
