Difficulty: Moderately Easy
Things You’ll Need:
- 1 1/3 cups all-purpose flour
- 1 1/3 cup rolled oats
- 1/2 cup Agave nectar
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 1 egg, beaten
- 3 tablespoons olive oil
- 2 cups fresh blueberries
Step1
Preheat oven to 425 degrees. Grease muffin cups or use cupcake liners. In your mixing bowl, combine flour, oats, Agave nectar, baking powder, and cinnamon.
Step2
Stir in milk, egg, and olive oil. Mix until just blended, mixture will be lumpy. Fold in the berries carefully.
Step3
Spoon into the muffin cups, 2/3 full.
Bake 20-25 minutes or until golden brown.
