Don’t let the recipe title put you off. These brownies are so delicious, and if you didn’t know they contained beans, you would be hard-pressed to identify the mystery ingredient! (Plus it is a great way to get beans into your picky children!)Remember...old fashioned recipes are always the best!

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 (15 oz.) can black beans (unseasoned)
  • 6 egg whites, lightly beaten
  • 1 1/2 cups dark brown sugar
  • 3 Tbsp. all-purpose flour
  • 4 squares unsweetened baking chocolate
  • 1 Tbsp. butter
  • 1 tsp vanilla
  • Dash salt
  • 1/2 cup walnuts or pecans, chopped

Step1
Preheat oven to 350 degrees. Grease an 8 x8 pan. Rinse beans in a colander. In a blender, purée beans and 3 egg whites until very smooth.
Step2
Over low heat, melt chocolate and butter until smooth. In a large bowl, mix bean purée, chocolate mixture, and all other ingredients (except the nuts) until smooth. Sprinkle with nuts.
Step3
Bake for 40 minutes or until edges pull away from the pan. (8 x 11 pan for 35 minutes. 9 x 13 pan for 30 minutes.) Let cool completely before cutting. Store covered in the refrigerator.
Serves: 12.
