Learn to pickle and preserve Chipotle peppers for use in spicy dishes.

Difficulty: Easy
Instructions

Things You'll Need:

  • Dried Chipotle pepper pods (as many as you like)
  • A glass container with a tight lid
  • Vinegar (enough to cover)
  • Salt
  • Water
  • Food processor
  1. Step 1

Place clean, dried peppers in a glass bowl or jar. I prefer a 1 qt. Pyrex bowl with plastic lid.

  2. Step 2

Cover peppers with vinegar. If you want a thinner sauce, add more vinegar.

  3. Step 3

Add approximately 1 tsp. salt per cup of vinegar.

  4. Step 4

Fit lid and store at room temperature in a place with moderate amounts of light for at least a week.

  5. Step 5

After a week, transfer peppers to the refrigerator.

  6. Step 6

Now you have ready-to-use whole peppers. To make a sauce, simply blend the peppers and pickle juice on low speed. Add water to obtain desired consistency.

Tips & Warnings
  • To keep a constant supply of pickled peppers, add more pods after you use some.
