Grilled zucchini is the perfect accompaniment to your summer backyard barbecue. It goes well with most grilled meats including hamburgers, chicken and fish.

Difficulty: Easy
Instructions

Things You'll Need:

  • Zuchinni
  • Olive oil
  • Knife & cutting board
  • Grill
  1. Step 1

You will need one large zucchini for each 2 persons, or one small zucchini for each person.

  2. Step 2

Thoroughly wash and scrub each zucchini. Do not peel.

  3. Step 3

Slice off both ends of each zucchini.

  4. Step 4

Slice each zucchini lengthwise so that you have long steak-like pieces.

  5. Step 5

Spray on olive oil with a mister or drizzle on with a spoon onto each zucchini on both sides.

  6. Step 6

Optional flavor additions are dried basil or oregano, salt and coarse ground black pepper, lemon pepper seasoning. However, plain olive oil really brings out the natural flavor in the vegetable.

  7. Step 7

Grill on a hot grill (over 400 degrees) for 3-4 minutes per side, checking frequently to avoid burning. You should end up with "grill marks" on the vegetables which is a nice aesthetic touch.
