Who doesn't love a muffin in the morning with a great cup of coffee? The trick is finding a healthy, guilt free muffin that tastes great. This muffin recipe is absolutely scrumptious and is a great way to start your day, or end it.

Instructions

Things You'll Need:

  • 3 cups old fashioned rolled oats
  • 1/2 cup agave nectar
  • 2 cups of your favorite gluten free flour if desired (I mix two kinds, usually brown rice flour and quinoa flour)
  • 4 teaspoons baking powder
  • 3 tablespoons cinnamon
  • 1 cup unsweetened apple juice (freshly juiced is delicious)
  • 2 large eggs
  • 4 tablespoons olive oil
  • 3 tablespoons vanilla
  • 2 organic apples, cored and diced, peeled if desired
  1. Step 1

    This is a really great recipe, it has been one of my favorites for years. It's great because you can serve it to anyone, vegans, vegetarians, diabetics, celiacs, dieters, low carb followers, etc. You also could use blueberries instead of apples, but this combination is just perfect I think and I usually get rave reviews from the health conscious crowd.

  2. Step 2

    Preheat your oven to 375. Line a muffin tin with paper cups.

  3. Step 3

    Mix all of the ingredients in a large bowl until moistened, do not overmix.

  4. Step 4

    Fill the muffin cups about 3/4 full and bake for 20 minutes, until the tops are golden brown.

  5. Step 5

    These muffins are excellent for breakfast, as a snack or even for dessert. They have a delicious apple/cinnamon flavor and are very healthy. I often make these for brunch parties or to go with a big pot of homemade soup.

  6. Step 6

    This recipe is gluten free for those who have celiac or are intolerant of gluten, but you can just as easily use all purpose flour, whole wheat flour, or spelt flour if you're not concerned about avoiding gluten or wheat. Enjoy my favorite healthy muffin recipe!

Tips & Warnings
  • This recipe makes about 24 muffins.
  • You also can add some protein powder for an added protein boost.
  • These are delicious with a little butter or almond butter on them, warm or cold
  • These freeze really well, so you can make extra if you like
  • Adjust this to your taste, adjust the sweetener, the amount of apple, or the amount of cinnamon. You also could use almond extract instead of vanilla if desired.
  • If you like the oversized, fluffy, refined flour, super sweet type of muffin from bakeries and coffee houses, then this one is probably not for you.
