  • 1 1/2 cups sugar
  • 3 cups cake flour
  • 3 tsp. baking powder
  • 5 egg whites
  • 1 cup whole milk
  • 1 to 2 tsp.fresh lemon juice

      Preheat the oven to 350 degrees Fahrenheit. Butter an 11 x 7-inch baking dish.

      Slice the unsalted butter and place the pieces in a large bowl. Allow the the butter to soften. Place the softened butter in a bowl with a stand mixer with granulated sugar. Mix until fluffy and light yellow.

      Sift together cake flour and baking powder. Add the butter and sugar mixture in three parts and mix well after each addition. Add milk, lemon and vanilla extract. Mix well.

      Separate eggs at room temperature. Add the egg whites one at a time while the mixer is running. Allow each egg white to mix in completely before adding the next.

      Spoon the batter into the prepared pan. Bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean
