When most people think of sheet cake, images of cakes topped with mounds of flower-shaped icing and popular children's characters come to mind. Before you pick up that icing spatula consider an alternative to traditional cake frosting. Fondant is a beautiful way to add elegance to a traditional sheet cake. Mostly used for weddings, fondant is actually suitable for any occasion and with a little practice, anyone can do it.

Difficulty: Easy
Instructions
  1. Step 1

Purchase fondant at a bakery supply, online or see if a local baker would be willing to sell you some.

  2. Step 2

Cover your cake with a thin layer of cake frosting such as buttercream or even an apricot jam to seal in the crumbs and help the fondant adhere to the cake. Be sure you let this layer dry completely before proceeding.

  3. Step 3

Decide if you would like to add a gel or paste coloring and any type of flavoring. Knead this in as you soften the fondant before rolling. Knead in a little bit of shortening or confectionery sugar, depending if the fondant is too soft or stiff.

  4. Step 4

Coat your work surface evenly with an equal mix of cornstarch and confectionery sugar. You can now roll out your fondant to 3/8-inch to 1/4-inch thickness. Remember to rotate but don't flip your fondant as you roll.

  5. Step 5

Roll the fondant onto your rolling pin and gently place over your cake. Unroll the fondant onto the cake as gently as possible.

  6. Step 6

Use your hand to smooth the fondant over the top of the cake and down the sides working out any creases or wrinkles as you go. You'll notice that as you rub, the fondant will take on a shinier, smoother appearance.

  7. Step 7

Cut off the excess fondant with scissors or a very sharp knife. Again, smooth out any imperfections with your hand or even a bowl scraper for a perfect finish. You're now ready to further embellish your cake however you wish.
