How to Make a Super Healthy Breakfast Burrito

Burritos are great breakfast options for busy people, as all of the ingredients are rolled into one tidy, tasty bundle. You can pack a whole grain burrito with fresh organic veggies, herbs and tofu for a super healthy breakfast choice. This recipe makes 6 (8-inch) burritos.

Instructions

Things You'll Need:

  • 1 tbsp. organic olive oil
  • Skillet
  • 6 tbsp. organic onion, chopped
  • 3 tbsp. organic green pepper, chopped
  • 3 tbsp. organic red pepper, chopped
  • 2 (12-oz.) packages organic firm tofu
  • 1/2 tsp. cayenne pepper
  • Fork
  • Dash of sea salt
  • Freshly ground black pepper
  • 1 (14.5-oz.) can organic black beans
  • Saucepan
  • Spoon
  • 6 8-inch organic whole grain tortillas
  • 2 small organic tomatoes, diced
  • 6 tbsp. fresh, organic salsa
  • Organic soy cheese, shredded
  • 6 tbsp. low-fat, organic sour cream
  • Plates or aluminum foil
  1. Step 1

    Heat the oil in a nonstick skillet, and saute the onion and chopped green and red peppers until they turn golden.

  2. Step 2

    Drain and cube the tofu, and add it to the mixture in the skillet. Add the cayenne pepper and cook the mixture for about 45 seconds, mashing it with a fork as it cooks. No moisture should remain in the tofu. Add a dash of salt and freshly ground pepper to taste.

  3. Step 3

    Heat the canned black beans in a saucepan and keep them warm while you finish the burritos.

  4. Step 4

    Spoon the tofu mixture into each organic whole grain tortilla.

  5. Step 5

    Add the beans, tomato, fresh salsa, organic soy cheese and a dollop of organic low-fat sour cream. Roll up the tortillas.

  6. Step 6

    Cut your breakfast burritos in half and serve them on plates, or wrap them in aluminum foil for breakfast on the go.

Tips & Warnings
  • Fresh, organic eggs can be added to the burrito in place of tofu.
