How to Buy a Rondeau

      Figure out what you want to prepare using a rondeau cooking pan. Typically, chefs use this pan for braising, poaching or as a slow cooker. A rondeau pan is similar and often confused with the different sizes of casserole dishes, because the rondeau has two side handles. A rondeau pot is taller than a low casserole pan and shorter than a casserole pan.

      Determine the size you need, considering that the larger size pans are heavy depending upon their material composition. You do not want a rondeau pot that is too heavy for you to lift from the stove top to place into the oven. Sizes in rondeau pans vary from the smaller 3 quart to the larger 6 ½ quart. The pan's thickness also contributes to its efficiency and weight.

      Decide what material works best for your cooking needs. Copper is the best heat conductor, so having a rondeau pan that is primarily copper or has a copper core are the most efficient choices. Stainless steel surfaces are also helpful in terms of durability, so a copper stainless steel mix is another smart choice.

      Seek a pan that has an extended warranty. The best warranty is a lifetime warranty that offers full replacement if the rondeau pan is damaged or broken. Typically, the more expensive brands offer a lifetime warranty.
