How to make a Black Bean and Garbanzo Bean (Chickpea) Salad

This easy to make salad can make refreshing side salad or as a quick snack with tortilla chips or pita bread. It also makes a healthy alternative to heavy pasta or potato salads.

Instructions

Things You'll Need:

  • 1 can of whole black beans
  • 1 can of whole garbanzo beans (chickpeas)
  • 1 can of whole kernel corn
  • 1 med green bell pepper
  • 1 small red onion
  • 2 carrots
  • 1 bunch of cilantro or parsley
  • sun-dried tomatoes
  • 2 - 3 lemons or limes
  • olive oil
  • salt
  1. Step 1

    Dice the carrots, bell pepper, sun-dried tomatoes, and onion. (Make sure to wash and peel accordingly). Place diced vegetables in a large bowl.

  2. Step 2

    Finely chop the cilantro or parsley. Add to the bowl with vegetables.

  3. Step 3

    Open the cans of black beans, garbanzo beans, and corn. Make sure to drain thoroughly. Add beans and corn to vegetables in the large bowl.

  4. Step 4

    Add lemon or lime juice to salad then drizzle with just enough olive to coat the vegetables. Stir everything together and add salt to taste.
    Enjoy with chips or pita bread or as a side dish with any meal.

Tips & Warnings
  • Vegetable amounts are only suggestions. You can add more or less to suit your taste.
  • You can add crumbled feta cheese if desired.
  • You can easily double the recipe to feed a larger crowd.
