How to Make Easy Enchiladas using "Doritos".

"Hello", This recipe is a yummy quick treat to share with other's who enjoy mexican food. I have made it for many family event's and also for just a quick meal at home. You can also experiment with other flavor's of Doritos. Like Four cheese, Cool ranch, etc. However I do not recommend BBQ flavor! "People WILL ask for the recipe"!! :.)

Instructions

Things You'll Need:

  • 1 Bag of Cheesier Doritos
  • 2 Can's mild enchilada sauce (RED)
  • 2 Can's Camballs Cream of Mushroom Soup
  • 3-4 Boneless Skinless Chicken Breast's
  • 1 can Black Olive's (sliced)
  • 3-4 cups Colby Jack Cheese (shredded)
  • 1/2 cup Green Onion's (finely chopped) "Optional"
  • Dallop of daisy sour cream (optional)
  • lettuce and tomato (chopped) "Optional"
  • Any other topping's you like...(optional)
  • 13x9in cake pan
  1. Step 1
     

    Boil the Boneless skinless chicken breast' s on stove top until tender. Then remove from heat. Shred the chicken into small pieces (careful very HOT. Once you have shredded the chicken, place it into a large bowl, to cool

  2. Step 2
     

    Preheat your oven to 350. While it is pre heating, open the bag of Doritos enough to let the air out, then crush them up really good in bag. Once they are crushed, add them to the chicken in the bowl.

  3. Step 3
     

    Poor both can's of cream of mushroom soup into the bowl, also poor the 2 cans of enchilada sauce into the mix...(make sure it's mild unless you want a totally different flavor and you like HOT) Mix very well... add 1/2 the can of olives, mix well.

  4. Step 4
     

    The oven should be preheat by now. Put the mixture in your 13x9 in cake pan, smooth it out, sprinkle with chopped green onion' s if you so desire, then put in the oven. Bake for 45 minutes to an hour, until firm all the way through.

  5. Step 5
     

    Now sprinkle with the desired amount of cheese until covered. Place back into the oven until cheese is melted.(approx.10 min.) Remove from oven and top with left over olives, green onion's, lettuce tomato's and any other topping you desire. Add a dallop of sour cream, and salsa is also good on top.

  6. Step 6
     

    Enjoy!! Make sure to share with other's, and also remember to experiment with other flavor combination's... where you may not like one but may like another.

Tips & Warnings
  • To tell if it is done, I usually use a butter knife to stick in it (like a cake). If there is a lot of stuff sticking to it when you pull it back out~ cook for a little longer and repeat, until it comes out clean.
  • Also, The batter cook's better and quicker if you split the batter in half and cook 1/2 at a time.
  • Remember not to double up your recipe on this, like you can with most recipe's, for it will not cook all the way through.(it should not be to mushy in the middle)
  • Chicken is very hot, when you shred it be sure to be cautious.
  • When you remove from oven, Let cool for approx. 15 min. "HOT".
