How to Make an Easy Chicken Salad
Chicken salad is an easy dish to fix, but it's also one of the most versatile salads in a cook's repertoire. A basic chicken salad is a great way to use up left over chicken and can be served as a quick lunch, or dressed up as a main course for a delicious dinner. Does this Spark an idea?
Things You'll Need
- 4 cups cooked, cubed chicken
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 tsp. salt
- Black pepper, to taste
- 1/2 tsp. freshly squeezed lemon juice
- 1/4 cup celery, finely chopped
- Your choice of extra ingredients

Place the cubed chicken in a bowl and stir in the mayonnaise, sour cream, salt, black pepper, lemon juice and celery. Blend all of the ingredients well.

Stir in all the extra ingredients you like. Try drained mandarin oranges, halved seedless grapes, drained and crushed pineapple, sweet or dill pickle relish, chopped apples, chopped walnuts, sweet corn, scallions or chopped green onions.

Chill the chicken salad in the refrigerator until it's time to eat, at least 30 minutes.

Tips & Warnings
To add some spice to your chicken salad, stir in 1 tsp. of nutmeg. If you like a bit of tang, add 1 or 2 tsp. of Dijon mustard.
If you're concerned about the level of fat in the chicken salad, substitute a low-fat mayonnaise.
For a more dressed-up luncheon plate, serve chicken salad on a bed of fresh romaine lettuce.
