How to Make Sugared Fruits for Display

Sugared fruits make a beautiful display for the holiday table and for buffets and table centerpieces. These are for display only and not meant to be eaten or nibbled on.

Instructions

Things You'll Need:

  • Fruit for display, such as grapes, figs, limes, oranges, crab or lady apples, tangerines or plums
  • Egg whites
  • Granulated sugar
  • Pastry brush
  • Wire rack for drying
  1. Step 1

    Allow all the fruit to be used to come to room temperature.

  2. Step 2

    Take about 3 to 4 egg whites and lightly beat in a bowl. You don't want them whipped but you want the egg whites broken up and mixed into one mass.

  3. Step 3

    Using a pastry brush, brush each fruit with the beaten egg white. You want to coat the entire surface of the fruit so be sure you leave no portion untouched with the brush. A thick coating will result in a goopy mass so a thin coat is all that is needed.

  4. Step 4

    Immediately sprinkle with granulated sugar over the entire surface. You can do this by either putting the sugar in a shaker and sprinkling on that way, which works fine for grapes and smaller objects. For larger fruits, hold the fruit over a bowl or plate and using your hand, grab a handful of sugar and dust while twirling the fruit in the other hand.

  5. Step 5

    Place on a wire rack for drying. Allow to dry a couple of hours before the display is needed.
