How to make bean and rice salad for a potluck, or anytime

This cold bean and rice salad is always requested at potlucks.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup white rice, cooked according to directions
  • 1 cup canned black beans, drained
  • 1 cup canned kidney beans, drained
  • 1 cup corn, drained
  • 1/2 cup chopped green onion
  • 1 red bell pepper, chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup red wine vinegar
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp ground black pepper
  • 1/2 cup olive oil
  1. Step 1

    Cook the rice according to package directions. Let cool.

  2. Step 2

    In a large bowl, combine the cooled rice, black beans, kidney beans, corn, onions, red bell pepper and cilantro. Mix well.

  3. Step 3

    To make dressing: In a small bowl, whisk together vinegar, garlic, chili powder, salt, red pepper flakes and black pepper. Whisk in oil, pour over salad and toss well. Refrigerate until it's time to eat.

Tips & Warnings
  • For less fat, you can double the vinegar and 1/2 the olive oil (depends on your taste for vinegar). I also 1/2 the chili powder if making for my mom, because she doesn't like anything spicy.
