How to Can Homemade salsa

Where I live they grow tomatoes in large fields. As soon as it becomes harvesting time I head to the sheds to buy the culls, which are great for canning. This is a receipe I found on the net, tried adjusting the seasonings to my own taste. Hope you like it.

Instructions

Difficulty: Moderate

Things You’ll Need:

  • 7 lbs of tomatoes
  • 6 anaheim chilies, diced
  • 4 poblano chiles, diced
  • 5 jalapeno chiles, diced
  • 3 serrano chilies, diced
  • 2 cups rough chopped yellow onions
  • 1 cup chopped fresh cilantro
  • 5 cloves garlic, minced
  • 1/2 cup white vinegar (5 % acidity)
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • enough pint jars to hold receipe..about 8 or 9
  • lids for jars
  • water bath canner
  • thongs for lifting hot jars from water

Step1
This step is very important! Wear gloves to cut peppers under cold running water. Leave seeds as the heat comes from the veins in the skin of the pepper not the seeds. I like to cut my peppers into small bits.
Step2
We call them Maters here! Prepare tomatoes by placing them in hot boiling water for about 30 or 45 second then place them into a bowl of ice water this help release the sking and it is easy to peel them.
Step3
Be sure an save the juice This is the fun part after peeling the tomatoes squeeze them over a collinger to remove juice you just want mainly pulp. Cut or chop into small pieces

Prepare jars and place lids in boiling water for a few minutes

Chop to the size you like Chop onions, mince garlic and chop cilantro.
Step6
Place tomatoe in an 8 quart sauce pan and bring to a boil. Boil for about 35 minutes or until it reaches the consistency you want.
Step7
Don't that look good! Add peppers, onions, cilantro, garlic, salt, pepper and vinegar. Return to boil. Boil until vegetables are tender.
Step8
Make sure to leave head space Fill hot sterile jars 1/2 inch from the top. Add jar lids and ring. Making it finger tight. Placing each jar in water bath canner. Bring to boil for 35 minutes.
Step9
Good on a cold winters night Remove jars and let cool. After cooling check each jar to make sure lids are silled by pressing down in the center of the lid. If it doesn't move then your jar is silled.

Tips & Warnings

  • The juice you saved can also be canned and saved by just adding salt and pepper to taste bring to a boil and fill jars process just like the salsa...You can use this juice in soups or even for drinking...ain't nothing better than a cold glass of tomatoe juice.
  • As I said before please wear glove when dealing with hot peppers...they will burn you!
