My family loves salmon croquette. It's quick, easy and delicious.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1-15 oz can salmon
  • 1 eggs beaten
  • 1/3 cup finely chopped onions
  • 2 dashes ground pepper
  • 1/2 tablespoon flour
  • 1 tablespoon corn meal
  • vegetable oil to coat the skillet
  1. Step 1

Drain the juices from the salmon and remove/discard the skin and bones. Keep the juices.

  2. Step 2

Mash the salmon in a bowl and add eggs, onions, juice from the salmon, pepper, cornmeal and flour. Form into 3-5 patties.

****If the patties are too soupy add more flour and cornmeal

  3. Step 3

Heat the vegetable oil in a skillet over medium heat until the oil bubbles. Place the salmon patties into the hot oil.

  4. Step 4

Fry until browned on the bottom for about 5- 7 minutes. Turn and fry until other side is browned for about 5 - 7 minutes.

  5. Step 5

Remove from skillet and drain on paper towels.

Tips & Warnings
  • When mixing the ingredients, if the patties are too soupy add more flour.
  • Try adding dry (seafood) seasons to add flavor.
