Cornmeal waffles go great with real maple syrup and whole butter for breakfast, lunch or dinner. This recipe uses beaten egg whites to create a light waffle, and just enough butter to give it great flavor.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 c flour
  • 1/2 c yellow cornmeal
  • 1 T baking powder
  • 1 T sugar
  • 1 t salt
  • 3 eggs, separated
  • 1/2 c butter, melted and cooled
  • 1 1/2 c milk, slightly warmed
  1. Step 1

    Separate the yolks from the whites. Beat yolks until smooth and set aside. Beat the whites until stiff. Reserve.

  2. Step 2

    Mix the dry ingredients together in a large mixing bowl.

  3. Step 3

    Stir the beaten yolks with the milk and melted butter. Add this to the dry ingredients, mixing until combined.

  4. Step 4

    Fold in the beaten whites.

  5. Step 5

    Use immediately on a heated waffle iron.
