How to Make The Easiest But Tasty Kimich Stew

Kimchi stew is one of the most popular dish in Korea. It is especially good on winter nights or after a long day out in the cold! It's spicy good, and warms you up fast! There are many variations of this stew so feel free to experiment and add in whatever veggies you like. This is my quick fix when I am craving for this soup.

Instructions

Things You'll Need:

  • 1 lb pork belly, thinly sliced or pre-sliced by butcher
  • 1 cup old kimchi
  • 1/2 pack tofu (medium or firm), cubed
  • 3 cups water
  • 1 tsp soy sauce
  1. Step 1

    Heat a medium sized pot over medium high heat. Add the pork and saute it for a minute or until pork starts to turn white.

  2. Step 2

    Pour in water and add in kimchi and tofu. Cover and bring to a boil. Once it's up to a boil, reduce heat to low and simmer for 30 minutes.

  3. Step 3

    Add soy sauce and ladle into large soup bowls. Serve with a bowl of white rice on the side.

Tips & Warnings
  • Old kimchi is just kimchi that has been fermented longer. It gives the stew a richer taste. If you do not have access to older kimchi, just buy a small jar of fresh kimchi from your grocer, and leave it in your fridge for 2 weeks. This will allow the fresh kimchi to ferment longer and become old kimchi.
