Creamed asparagus on toast is a classic dish that makes a healthy and delicious breakfast or lunch. This easy recipe is comfort food at its best. Does this Spark an idea?

Things You'll Need

  • 1 lb. asparagus
  • 2 hard boiled eggs
  • 1 tbsp. butter or margarine
  • 1/4 c. flour
  • 2c. milk
  • 6-8 pieces of bread for toasting

Instructions

    • 1

      Peel the hard boiled eggs and chop them into small, bite-sized pieces.

      Sautee the asparagus in a skillet until it is tender. Alternately you can steam the asparagus in a small covered saucepan. Remove the asparagus and set it aside.

      Put the butter (or margarine) into the saucepan to melt on medium heat.

      When the butter begins to melt slowly add the flour, stirring quickly until it makes a thick paste. Keep adding flour and stirring constantly.

      Add cold milk slowly, a tablespoon or so at a time, whisking it into the flour mixture. Stir constantly.

      Add the chopped eggs and the sauteed asparagus.

      Continue to stir and cook over medium heat until the sauce is thickened.

      Toast the bread in the meantime. Serve the creamed asparagus hot over fresh toast.

Tips & Warnings

  • You can use canned asparagus; if you do this, you don't have to sautee it.

  • If your sauce doesn't thicken enough to your liking, stir a few more tablespoons of flour into a cup of cold water with a fork until the lumps are gone, then stir the mixture into the sauce to thicken it.

  • Be sure your asparagus is cooked to tenderness before you add it to the creamed sauce

  • When you are ready to stir the flour into the hot butter, also be ready to add the milk right away, as soon as the flour mixes in with the butter.
