How to make quick Mexican rice.

Love Mexican food. Rice is a staple in Mexican cuisine and this recipe is quick and easy. Great side dish to any chicken or beef plate.

Instructions

Things You'll Need:

  • Quart pot with lid
  • 3 cups of water
  • 1 cup of rice
  • 1 tomatoe diced
  • 1 onion diced
  • tomatoe soup cube
  • half tablespoon of ground cumin
  1. Step 1

    First dice the tomatoes and onions. Place the pot on a medium flame with a tablespoon of vegetable. Let the oil cook for about a minute.

  2. Step 2

    Place the diced tomatoes and onions in the pot. Add the half tablespoon of Cumin.(Remember a little Cumin goes a long way. The more you add the more kick you add.) Mix contents together.

  3. Step 3

    Now add cup of uncooked rice. Remember a cup of uncooked rice equals 3 cups of cooked rice. Cook until at least half the rice is a little brown, about 3 to 5 minutes. Add the tomatoe bullion cubs about 2 to 3. Add 3 cups of water. Raise the flame to high and let the water come to a boil.

  4. Step 4

    Stir the contents to loosen up the bullion cubs. After the water has come to a boil, place the lid on pot, reduce the flame to low heat. Simmer for about 20 minutes

  5. Step 5

    After 15 minutes check the rice, if the water has evaporated, remove from flame and let the last five minutes cook with lid still on. If water is still present place back on heat cook another 2-5 minutes.

  6. Step 6

    Remove from heat let stand about 2 minutes and serve. You can be creative with this dish. Add a can of corn, drained, after 10 minutes of cooking. Or a can of mixed vegetables.
    Serve with your favorite Chicken dish as a side, or to your Carne Asada.
    Or eat as vegetarian dish. How ever you serve it remember to enjoy!!

Tips & Warnings
  • Be creative. Corn goes well. Green beans.
  • You can also make bean, cheese and rice burritos.
  • Be careful when you lift lid off. Steam can burn, so always open away from your face and arms.
  • Rice can be tricky to cook.
