  • 4 boneless chicken breasts, skinned
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 avocados, cut in wedges
  • 1 cup shredded Monterey jack or cheddar cheese
  • 1 stick butter, cut in half
  • 1 small onion, chopped
  • 1 cup mushrooms (about 6-8), sliced
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 2 cups cooked rice

      Cut chicken into small pieces. Salt and pepper to taste; lightly coat with flour.

      Saute chicken in half stick of melted butter until golden brown; set aside.

      Preheat oven to 350 degrees. Saute onion and mushrooms in remaining butter until softened but not browned. Stir in remaining flour, chicken broth and wine.

      Cook over low heat until thickened, about 5 minutes. Stir in avocado and 1/2 cup shredded cheese, mixing well.

      Arrange chicken pieces in a large, shallow baking dish. Spoon avocado mixture over chicken and top with remaining cheese. Bake 10-15 minutes until cheese is melted. serve over cooked rice.
