Sometimes berries go bad faster than you can eat them. Before they hit that point here is a simple recipe you can use for a delicious bread that takes little time to make! Any kind of berry will work with this recipe- which makes a wonderful breakfast bread or after-lunch snack!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2 Bread Loaf Pans (Greased)
  • Preheat oven to 350 Degrees F
  • 3 Eggs
  • 1 1/2 Cup Sugar
  • 1 Cup Vegetable Oil
  • 1 Tbsp Vanilla Extract
  • 2 Cup Flour
  • 1 Cup Oats
  • 1 Tbsp Cinnamon, ground
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 2 Cup Berries (any kind)
Step1
In a medium-sized bowl blend together the Eggs, Sugar, Oil and Vanilla.
Step2
In a large-sized bowl blend together the Flour, Oats, Cinnamon, Baking Soda, Baking Powder and Salt.
Step3
In the large bowl mix the two sets of ingredients together then fold in the berries.
Step4
Pour the mixture into the greased loaf pans and bake for 1 hour at 350 degrees Farenheit.

Tips & Warnings

  • Stick a toothpick in the cooked bread- if it comes out clean (with no dough stuck to it), the bread is cooked.
  • Serve warm with butter for a great treat!
  • Don't set the pans down too hard once you pull them out of the oven- the bread may collapse in the middle- it will taste the same but won't look as pretty.
