How to Make Fruity Hawaiian Cake

This recipe is nice and cool for the summer. It is best served cold since there is fruit and cream cheese in it. You could substitute any fruit you wish. But, the pineapple and the crushed pecans are really good together.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups flour
  • 2 eggs
  • 2 cups brown sugar
  • 20 oz can of crushed pineapple (with juice)
  • 1 cup of crushed pecans
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • mandarin oranges
  • For Icing
  • 1 stick margarine
  • 3 oz. cream cheese
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • colored sprinkles
  1. Step 1

    Preheat oven to 350 degrees. Lightly grease a 9x2x13 cake pan. Mix all ingredients and pour into cake pan.

  2. Step 2

    Bake at 350 degrees for 40 minutes. Let the cake cool. In the meantime, mix all icing ingredients. Beat until creamy.

  3. Step 3

    When cooled, ice the cake. Place some mandarin orange slices on top if desired. Shake colored sprinkles on top. Store in fridge until ready to serve.
