How to Prepare and Cook a Leg of Lamb

The first time you prepare leg of lamb can be daunting. Recipes for preparing and cooking are getting harder to find. But, it doesn’t have to be a challenge; roasted leg of lamb takes very little effort and rewards in a great meat dish.

Instructions

Things You'll Need:

  • 1 – 5 to 7 pound leg of lamb
  • 1 tablespoon parsley flakes
  • 1 teaspoon basil
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon crushed pepper
  • 2 cloves garlic, slivered
  • Lemon juice
  • Basting brush
  1. Step 1

    Trim all silver skin and visible fat from the surface of the meat.

  2. Step 2

    Combine all the herbs in a bowl.

  3. Step 3

    Cut one half inch pockets into the meat, working around all sides of the leg of lamb. Stuff each pocket with the herb mixture.

  4. Step 4

    Brush lemon juice all over the leg of lamb. Use any leftover herbs to rub onto the meat.

  5. Step 5

    Roast the meat in a 325 degree oven for at least 3 hours. A minimum of 3 hours is necessary for "rare" leg of lamb. It may take up to 4 1/2 hours for well done meat.

Tips & Warnings
  • A meat injector syringe makes for simple seasoning of the meat.
  • Use a meat thermometer to test for doneness. Leg of lamb should be at least 170 degrees to insure fully cooked meat.
  • Let the meat stand for at least 15 minutes before carving.
  • Mint jelly is the perfect partner for lamb to bring out the meats best flavor.
