Things You’ll Need:
- 2-3 c. raw walnuts
- 12 soft dates, pitted
- 2 C soaked & drained cashews
- ½ C maple syrup
- ½ C lemon juice
- ½ C coconut oil or butter
- ½ tsp. sea salt
- ½ tsp. vanilla extract and or section of vanilla bean
- agave nectar
- vanilla
- arrowroot powder
Step1
In Food Processor, blend 2-3 c. raw walnuts till fine meal. Add soft dates (12), pits removed. Mix until a fine dough consistency is achieved. Form dough into ball and place onto glass pie plate and or any glass cake pan. Form into a thin, ¼ inch thick crust with 1” edge, and or mini cakes. Freeze in freezer for 1 hour.
Step2
In a blender, blend the cashews, maple syrup, lemon juice, coconut oil or butter, sea salt, vanilla extract and or section of vanilla bean
until creamy. Add into shell of pie crust. Freeze for 1 hour until middle area is firm and sliceable
Step3
In blender add 1 C your favorite fruit, agave nectar, vanilla and arrowroot powder (thickener)
Pour over cake, slice and serve.
