These simple instructions will teach you how to make REAL AUTHENTIC Mexican SOPES!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Maseca Instant Corn Masa Flour
  • Water
  • Salt
  • Steak, Chicken and/or Chorizo
  • Refried Beans
  • Queso Fresco (Mexican Crumbling Cheese)
  • Crema (Mexican "cream").. if not, use regular Sour Cream
  • OPTIONAL: Onion, Cilantro
  • Canola Oil
  • 2 skillets/frying pans
  1. Step 1

    In a large mixing bowl, combine 1 cup of Maseca Corn Flour with 2/3 cup of water and 1/4 tsp. of salt. Kneed together.

  2. Step 2

    Break dough into small balls about 1" in diameter and squeeze with your palms to form a thick, round pancake-type tortilla.

  3. Step 3

    Toss it onto an ungreased skillet on med-high heat. Flip after 45 seconds. After 30 seconds, remove from heat.

  4. Step 4

    On a plate, quickly pinch up the edges to form a brim about 1/4" high.

  5. Step 5

    With a pair of tongs, place the dough into a skillet with 1" of canola oil on high heat. Fry until golden (about 4-5 minutes).

  6. Step 6

    While the sopes fry, begin to cut steak, chicken or chorizo into very small morsels and season with salt and pepper. When the last sope is fried, remove excess oil and fry steak/chicken/chorizo.

  7. Step 7

    Heat beans in a saucepan over low heat or in a bowl in the microwave for 1 minute.

  8. Step 8

    If you like onion and cilantro, chop some up! Smear refried beans on the sopes, sprinkle some steak/chicken/chorizo, and top off with Queso Fresco, Crema, onion and Cilantro!
