Make Dannys Chicken Tortilla Soup

Chicken Tortilla soup is a great spin on Chicken Noodle. Here is how I make it at home.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 10 Flour Tortillas
  • 1 lb boneless skinless chicken breasts
  • Cilantro
  • 4 cloves Garlic
  • 4 large stalks of celery
  • 2 small bag of baby carrots
  • Oregano
  • Chili Powder
  • Olive Oil
  • Vegetable Oil
  • A large stock pot
  • A deep frier
  1. Step 1

    Cut the chicken breast into cube about half an inch wide. Go ahead and cut the garlic cloves into quarters and add all this to the preheated stock pot with a little olive oil. Stir this a few times to make sure the chicken browns just a bit on the outside. Do not cook it all the way through.

  2. Step 2

    Chop a handful of cilantro and slice the celery. Add these to the pot for just a minute. This allows their flavor to infuse with the chicken.

  3. Step 3

    Add 2 quarts of water and cover. Also add your herbs, spices, salt and pepper to taste. Bring this to a boil and add the baby carrots. Reduce the heat and allow it to simmer.

  4. Step 4

    Add the vegtable oil to your frier or frying pan and start it heating. While this is happening use a sharp knife or pizza cutter to slice your tortillas into strips about 1/4 of an inch wide. Once the oil is heated, add the tortilla strips and cook them until they are golden colored. Place them on a plate with a paper towel and allow them to drain.

  5. Step 5

    Serve into a large bowl and top with the tortilla strips. Add shredded cheese and a little more cilantro for garnish.

Tips & Warnings
  • Modify this recipe as you see fit. This is just my personal spin on it.
  • Squeeze a little lime on the served dish for a little zing.
  • Be careful with hot oil. Keep the kids away.
  • Beware not to over cook the tortillas. They're kinda gross if they're too dark.
