Difficulty: Moderately Easy
Things You’ll Need:
- ¼ C butter
- 3 C hash browns, frozen and shredded
- 4 eggs, lightly beaten
- ½ lb. fully cooked ham, julienned
- ½ C cheddar cheese, shredded
- 1/8 tsp. salt
- Pinch black pepper
Step1
In a 10 inch skillet over low heat, melt butter. Add potatoes, salt, and pepper. Cover and cook for 15 minutes, stirring occasionally.
Step2
Pour eggs over the potatoes and sprinkle with ham. Cover and cook for 10-12 minutes or until the eggs are set.
Step3
Sprinkle with cheese, cook uncovered until melted. Cut into wedges.
Serves: 8-10.
