How to make Summer Black-eye Pea Crab Salad

The only thing that makes a great seafood salad better is the addition of black-eyed peas. This recipe is great along side chicken or other seafood. Enjoy.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1/2 cup mayonnaise
  • 1/4 cup Italian-style salad dressing
  • 2 tablespoons grated Parmesan cheese
  • 2 cups black-eyed peas
  • 8 ounces fusilli pasta
  • 1 cup crabmeat
  • 1 cup broccoli florets, parboiled
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped green onions
Step1
Prepare pasta according to package directions. Be sure not to over cook. Drain and rinse so that noodles do not stick.
Step2
In a large mixing bowl combine the mayonnaise, Italian dressing, and cheese. Blend until color is the same through out.
Step3
Mix in peas, pasta, crabmeat, broccoli, pepper, tomato and onions. Toss the salad to mix. Cover and chill for at least 2 hours.

Tips & Warnings

  • Watch for seafood allergies.
  • Never leave the stove unattended.
