This Date Nut Torte is the best tasting and simplest raw food dessert you will ever make. It takes only 15 minutes to prepare and cleanup, just make sure the dates are already soaked.

Instructions

Things You’ll Need:

  • 18 Dates (1/3 pound)of Deglet Pitted Dates
  • 2 cups (1/2 pound) of walnut half's
  • 2 Cups (3/4 pound) of organic Thompson Raisins
  • One half Lemon
Step1
Obtain One Cup Of Dates I obtain my dates from my local heath food store in their bulk section, it takes about 18 Deglet Noor Pitted Dates to feel a cup, if up buy a 1/3 pound of date you should have enough.
Step2
Soak Dates In Water Soak your dates in distilled or spring water. The longer you soak the dates the smoother your frosting will be. I recommend between 4 and 8 hours. If you do like date chunks in your frosting soak at least for 2 hours.

Obtain Two Cups Of Walnuts I obtain my walnuts from my local heath food store in their bulk section, you will need approximately a 1/2 pound of walnut half' s to make two cups of walnuts.

Obtain Two Cups Of Raisins I obtain my raisins from my local heath food store in their bulk section, it takes about 3/4 pound of organic Thompson Raisins to make two cups of raisins.

Put Walnuts And Raisins Into Food Processor Place the walnuts and raisins into the food processor. Process the mix until they start to ball. This can take several minutes to happen. We like yours really mixed, but if you want yours to be chunkier do not mix as long. Just experiment until you get it where you like it.

Walnuts And Raisins After Processing Here is what walnut raisin mix looks like after it has been processed.

Walnuts And Raisins After Processing (Close Up) If you look closely at the walnut and raisin mix you will see that the walnuts have almost completely disappeared.

Place Walnut And Raisin Mix On A Serving Tray. Pour the walnut and raisin mix onto whatever you plan to serve the torte on. Using your hands and fingers shape the torte into a circle six inches across, flatten to a height of one and one quarter inches. Notice how much oils is on your hands after you shaped the torte.

Make Into A Torte Here is what the torte looks like after it has been shaped.

Soaked Dates Here is what the dates look like after they have been soaked.

Drain The Dates; Make Sure Pits Are Removed Drain the dates; make sure you remove all of the pits. I use the soak water in my smoothie, or I just drink it by itself.

Obtain One Half Lemon You need the juice of half a lemon. While watching Alissa's DVD, I saw this neat tool for remove juices, on the DVD Alissa used a wooden one. I found this one made of ceramic, The label calls it "The original Mason Cash", and it is made in England.

Process Dates And Lemon Juice Put the dates and lemon juice into the food processor. Process until it is creamy. You may have to stop the food processor several times and scrape the side of the container and then start the processor to continue mixing.

Finished Dates And Lemon Frosting Here is a picture of the finished date and lemon frosting. This is great tasting stuff; I plan on using it in other recipes.

Finished Dates And Lemon Frosting (Close Up) Here is a close up view of the frosting, I got in a hurry and only soaked the dates for two hours, so the frosting is a little chunky.

The Finished Date Nut Torte This is what my finished Date Nut Torte looks like. I used banana to top mine, Alissa used raspberries to top her' s on the DVD. This is very rich stuff you should be able to get 16 servings out of this torte, 8 as a minimum. You can eat the torte as soon as it is done, but I think it tastes better if it has been refrigerated for a couple of hours. Another great thing about this torte is it only takes about 15 minutes to prepare, if you have the dates already soaked.

Tips & Warnings

  • If you really want a creamy frosting soak the dates between 4 and 8 hours.
