Things You'll Need:
- 1 1/2 cups all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 3/4 cup water
- 1 egg
- Zucchini

Step 1
Peel desired amount of zucchini and slice it thinly. Place sliced zucchini on a paper towel and allow to sit for about 10 minutes.

Lightly press zucchini slices between paper towels to help extract as much moisture as possible.

Combine dry ingredients in one bowl, and the wet ingredients in another.

Step 4
Combine the bowls of ingredients and stir briefly until the mixture forms a lumpy batter.

Step 5
Dip zucchini slices in the batter and fry in 375° vegetable oil for roughly one minute on each side.
