These are traditional English Shortbread Cookies that are great to snack on for tea or with a latte. Remember, nothing beats an old fashioned traditional recipe! Your family will love them!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2-1/4 sticks unsalted organic butter, chilled
  • 2-1/2 C organic flour, sifted
  • ½ C organic sugar
  • 1 tsp. vanilla extract
  1. Step 1

    Preheat oven to 300 degrees. In a large bowl, mix together all of the ingredients with a pastry cutter. Blend evenly into little pieces.

  2. Step 2

    Form into a dough ball and cover with wax paper. Roll out into a flat circle with a rolling pin, about ½ inch thick. Remove the wax paper and use a pastry knife to lightly score into wedges. Do not cut apart.

  3. Step 3

    Prick the surface with a fork, making your own special pattern. Place on a greased cookie sheet and bake for 30-45 minutes. Once cooled, shortbread can be broken into wedges.
    Makes 2 dozen.
