Enjoy the fresh taste of strawberries all year long from your homemade jam. Learn how to choose berries, prepare them for jam and what other ingredients you'll need, then on to canning.

Difficulty: Moderate
Instructions

Things You'll Need:

  • strawberries
  • lemon juice
  • sugar
  • pectin
  • spoon and ladle
  • jelly jars
  • funnel
  • canner
  • water
  • towels
  1. Step 1

Choose berries that are firm without any blemishes. Berries that are mostly ripened are fine for jam. If they're too ripe your jam won't setup.

  2. Step 2

    Wash and hull the berries.

  3. Step 3

Crush enough berries to make 5 cups.

  4. Step 4

Bring berries, 3 tablespoons lemon juice and one package of dry pectin to a boil. Add 7 cups of sugar and bring back to a roiling boil for 2 minutes, stirring constantly.

  5. Step 5

Remove from heat and skim foam off the top.

  6. Step 6

Ladle hot jam into hot jelly jars through a funnel, wipe rims and seal with a new lid and ring.

  7. Step 7

Lower jelly jars into canner full of boiling water. Add more boiling water till lids are covered by a couple of inches. Process 10 minutes after water comes to a gentle boil again.

  8. Step 8

Remove from water and set on towels to cool. Lid should pop when sealed. If lid moves up and down when pressed, reboil with new lid. Or you can put it in your refrigerator to use when it sets up. It could take up to 2 weeks for jam to set.
