Step 1
Make a schedule. This should be done in the very beginning of the project. It is sometimes done before even getting the job secured by the client. Work out the schedule with the client present, or at least get it approved. Be realistic, but ambitious about the schedule.

Manage time wisely. Know when you work the best and try to dedicate those times strictly to the project. Some people work the best in the beginning of the project because of enthusiasm, then try and get the most done at first. Some work best at night, so work then.

Set deadlines throughout the project. Deadlines will help keep you on track throughout the entire process. Make the client aware of your deadlines and update them after each deadline. For instance, have a date by which you want editing done, audio done and visual done. The final deadline should be for final edits.

Break the project down into phases. Having smaller projects within one large project will help you stay organized, positive manage time well and not get overwhelmed. Have the client involved and knowledgeable about each project phases as well, updating them on this.

Make lists. Lists help many people. How you make lists is a personal choice. It helps some people to list tasks on a daily basis, on a task basis or in an even broader context like a master list of the entire project. As you accomplish things cross them off the list.

Try some project management software. This can help a lot if you are not very organized or a procrastinator. You must be computer savvy for these to help, but most working in video production are. Try Microsoft Office Project which is very user-friendly.
