How to Make Vegan Banana Bread

Things You'll Need

  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 2/3 cup vegan margarine
  • 3 very ripe bananas, mashed well
  • 2-1/4 cup flour
  • 1/2 tsp. baking soda
  • 2 apples, peeled, cored and chopped into small pieces
  • 1/3 cup soymilk
  • 1 tsp. cider vinegar
  • 1 and 1/2 tsp. vanilla
  • 2 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/2 tsp. salt
  • Small loaf pan
  • Non-stick cooking spray

Instructions

      Preheat oven to 350 degrees Farenheit.

      Grease a small loaf pan with vegan margarine or non-stick cooking spray.

      Combine flour, baking soda, salt and spices in a small bowl.

      Mix the soymilk and cider vinegar in another bowl.

      Cream together the butter, white sugar and brown sugar in another bowl.

      Add to the creamed butter and sugar the bananas, apples, soymilk mixture and vanilla.

      Add the dry ingredients to the wet ingredients. Stir until well mixed.

      Pour batter into greased pan. Bake for 1 hour and 15 minutes to one and a half hours.
