How to Make Rose Petal jam
If you're looking for a jam whose taste is as unique as its name sounds, search no further. Rose petal jam is about as unique as they come, and makes a great spread for crackers or homemade bread. If you enjoy the rose-flavored loukoumi (Turkish Delight), then your tastebuds are in for a treat with this jam.
Things You'll Need
- 2 cups rose petals, firmly packed
- Scissors
- 1 1/2 cup water
- Large saucepan
- 3 cups white sugar
- 1/2 lemon's juice
- 6 oz. liquid pectin
- 1 teaspoon rose water
- Large spoon
- Strainer
- 1 teaspoon red food coloring (optional)
- 1/2 pint canning jars and lids

Pick off the petals from bright, scented red roses. The best kinds to use are rosa canina, rosa gallica officinale, rosa rugosa and rosa eglanteria, but any kind will do.

Cut off white spots or other deformities from the petals, then cut the petals into small strips.

Rinse the strips in cold water and drain. Measure out between 1 1/2 and 2 cups of petals, packed firmly.

Put the water and petals in a large saucepan. Boil for 10 minutes, then add the sugar. Allow the water to boil once again, then add the pectin, lemon juice and rose water and stir until everything's dissolved. Use a large spoon to skim off the foam and, if you wish, use a strainer to remove the petals from the mixture. The petals add an element of chewiness to your jam, so if you just want the flavor, remove the petals.

Stir for a few moments to keep the petals from floating to the surface if you're going to keep them in. Add a few drops of red food coloring if you want.

Turn the heat down and let it simmer until setting point is reached. Test for this by pouring a little bit onto a cold saucer. With your finger, gently press down on the mixture with your finger. It's ready if it wrinkles. If it doesn't, allow the mixture to simmer a bit longer.

Pour the mixture into the jars and seal them. If you've left the rose petals in, they will rise to the top and leave a clear jelly beneath.

Remember, the redder the flowers and the stronger the scent means the better your jam is going to be.
