When it comes to leftovers, it's often hard to think of a fresh and exciting way to eat them. Well, if you have a bunch of spaghetti and a few veggie burgers in your freezer, then you are in luck. Here's a recipe that can be combined in 10 minutes and on the table in under an hour. Here's how to make spaghetti vegetable burger pie.

Instructions

Things You'll Need:

  • Leftover spaghetti
  • Vegetable burgers
  • Jar of tomato sauce
  • Parmesan cheese
  • Pie plate
  • Foil
  • Oven
  1. Step 1

    Pre-heat your oven to 375 degrees.

  2. Step 2

    Place spaghetti into the bottom layer of your pie plate.

  3. Step 3

    Break your vegetable burgers into small pieces and crumble on top of the spaghetti. (If they are frozen, that is fine; they'll cook while baking.)

  4. Step 4

    Add a healthy layer of your favorite tomato sauce. (The amount will depend on how much is left in the spaghetti from the previous night.)

  5. Step 5

    Grate a large amount of parmesan cheese over the whole pie. One can never have enough cheese.

    Cover the pie plate with foil and place it in the oven for 40 minutes. About 30 minutes into cooking, you can remove the foil to get a nice golden brown crust on the Parmesan cheese.

    Allow the spaghetti vegetable pie to cool, and then serve.

Tips & Warnings
  • You can substitute any kind of pasta for spaghetti in this recipe. You can even make a pesto pie if the leftovers were a pesto pasta.
  • You can substitute other cheeses for parmesan as well. A mixture of mozzarella and pecorino romano is a popular choice.
  • Consider adding fresh herbs into your spaghetti pie to give your leftovers a fresher taste. Fresh basil and oregano are good bets.
  • If you aren't a fan of veggie burgers, use real meat. Just make sure the ground beef is cooked before adding it.
